Vegetarian cookbook
Our kitchen leader Sirkka took the time and has written a cookbook. “La Cocina bella-a journey through the art of vegetarian cooking” it is called.
In this book Sirkka is sharing some of her special and exotic food creations she developped in the last years in the kitchen of Argayall.From easy starters to unique main courses you find 101 inspiring ideas for a wholesome and tasty vegetarian cooking.
As Sirkka also likes to explore the healing quality of nutrition and discover the spirit of different cultures in their kitchen, she offers with her book a simple approach to vegetarian cooking which is connected to a holistic and loving way of life and nourishes the body as well as the soul.
Surely the “middle eastern feast” and the “Indian delight” are two highlights for everyone that ever tasted these dinners at the Finca.
To start with something more simple, try this:
“Grilled pesto aubergines”
350g eggplants, cut lengthwise in half and then in thin slices, 8tbls olive oil, 1tbls coarse salt.
Pesto: 50g basil, 50g parsley, 50g sunflower seeds, roasted, juice of 2 lemons, 1 garlic clove, 2 tbls olive oil, 50ml sparkling water, salt, pepper, 3 tbls almonds, chopped and roasted.
Place eggplant slices on a greased and salted tray and bake at 200 degree C for 30 minutes. Mix all ingredients for the pesto together in a blender. Place eggplants upside down on a tray, garnish each slice with some pesto and sprinkle with almonds.
